Weigh-in at the Hard Rock

Ever had one of those dreams when you had to give a presentation, or take a test, and you realize you forgot your pants, or aren't wearing any clothes? Your hearts racing as you realize you're standing practically naked in front of a large group of people. Well... welcome to the weigh-in at the Hard Rock for Atlanta Corporate Fight Night 9!  

When you sign up to do a fight night you sign a contract agreeing to a certain weight class. So depending on who you are you either have lose weight, gain weight, or maintain your weight. My contracted weight class that I had to be at for fight night was 130-138 pounds. When I started this journey back in December I was around 145 pounds. So I only needed to lose between five and ten pounds in ten weeks. Part of my motivation for this fight was to lose a couple more pounds and also to be in the best shape I could be in.

I would be lying if I said I wasn't nervous. It's a little daunting to think about getting in front of a room full of people and stripping down to your skivvies  The week before weigh-in I cut out protein, in addition to everything else I haven't been eating, and was drinking smooth move every night. (If you don't know what smooth move is, the name kind of tells it all, I will spare you the details).  I thought a lot about what I would be, or should I say wouldn't be wearing in front of everyone for the weigh-in.

The weigh-in was a milestone for me. I found the perfect outfit I had tirelessly been looking for at Wal-Mart of all places. I went with a wonder woman outfit because I wanted to have some fun with it, plus the added bonus of if people started laughing I would think it was the outfit and not me! Topping the scale two years ago at 255 pounds  I am not confident with the way my body looks so stripping down in a crowded room is not my idea of a good time. I can honestly say when I weighed in on February 18 it's the lowest I have ever been. My goal was to weigh in at 135 pounds. I exceeded that by stepping on the scale that night and officially weighing in at 133.8 pounds. I'm proud of who I am and what I have accomplished over the past couple years and my weight loss journey has been a part of that.

Who's Going To Meet Disaster on February 19?

Lindsey "Disaster" Struck and Kelsey Fox are ready to THROW DOWN at ACFN 9 on February 19 at the Atlanta Marriott Marquis!

Lindsey, originally of Snellville, is the Assistant Program Supervisor of the City of Decatur Athletics Department. After attending two Corporate Fight Nights and watching several friends from her women's softball league compete (and win!), Lindsey has decided to step in the ring herself! Lindsey wants "to participate in Atlanta Corporate Fight Night because [she's] seen so many inspiring transformations" as a result of the show, and she ultimately hopes she "can be the inspiration for someone else." Lindsey has been FIERCELY training at Buckhead Fight Club for this bout - see if she can keep up the Decatur Women's Sports League's 3-0 win streak at ACFN!

Kelsey, a graphic designer from Atlanta, initially started boxing just to get a good workout. However, she quickly fell in love with boxing training and was eager to learn more! Kelsey is excited to keep progressing in her boxing career with an amateur bout on ACFN 9, especially since it benefits such a great cause in the Georgia Center for Child Advocacy!

There was plenty of food, and drinks going around the Hard Rock, as well as music from the "Nice Guys Band". I had dressed up the best I could in my nice thrift store pants (since I no longer have nice pants that fit me) and Terri "The Boss" requested no jeans. Good friends that were able to attend were present and the night was emceed by Vince "The Voice" Bailey who brings a great sense of humor and does a great job of introducing everyone.

 

Being one to hate public speaking, as people from work can attest, (I've been known to puke before having to give parents meetings,) I was nervous when Vince called my name... Lindsey "Disaster" Struck. He introduced me as the Assistant Program Supervisor for the City of Decatur where I then briefly described that I organize youth and adult sports such as basketball, softball, flag football, soccer,  etc... for a living. Working with kids as I do Vince then commented that Children's Healthcare of Atlanta must mean a lot to me. I think its a great organization that does so much for the kids, they deal with everything from broken bones to kids with terminally ill diseases. I'm glad a program like this exists to help parents out. I have parents in my program that work for CHOA as well as one of the players on my hockey team.

 

Vince then remarked that he's run into me at many of the Atlanta Corporate Fight Night's, which is true. He inquired as to what got me into the ring this time around. For me it's hard not to get caught up in the fight night experience especially after watching my girlfriend, "Mean Jean's", experience in Fight Night 7 first hand. It was absolutely amazing to watch her first hand learn how to box, lose almost 40 pounds in 10 weeks, and see her step in the ring and win. I also had the privilege of seeing my close friends decide to fight in Fight Night 8 and see what they had to go through. Brandi "Boom Boom" Ansley, Sulli "The Magic" Sullivan, Holly "Kale Krunch" Levine. I figure it's my turn to step in the ring and see if I have what it takes.

 

The support I've received so far has been overwhelmingly positive and unlike anything I could ever have imagined.  I'm excited for this new challenge and trying to enjoy every minute of it. I've got one of the best trainer's in the world (who's been in the Guinness Book of World Records for boxing and is being inducted into the Women's International Boxing Hall of Fame later on this year) and know that if I can listen to her I'll have no problem winning in the ring.  It's been great to be able to train with Kale Krunch and Huckleberry through this process and Jean's come to some of training sessions and always has great advice. I'll have a great team in my corner come fight night and don't want to let them down.

Healthy Training Recipes

Holidays for me are always a time of fun, family/friends, and food. I am blessed. I have the best family and friends one could ask for and a mother who happens to be a very good cook. Inevitably with all the parties and special holiday dinners I tend to over-indulge . Then, when all is over, there is the post holiday blues. The slight disappointment of coming off my diet and the second guessing of myself. Did I really need that slice of pizza or a second helping of stuffing? No, I didn't, but man was it delicious. Having lost a great deal of weight I know that these slips won't kill me and everybody needs to cut loose once in a while. A lot of people have asked me how I lost all the weight. No, I'm not sick, or on crack. I didn't get sick. I didn't have gastric bypass or lap band surgery (not that their it anything wrong with losing weight that way, It has helped many people that I know and love).Honestly, I lost it the old fashion way through diet and exercise. So I wanted to share a couple of my favorite recipes. Those that know me know I'm not much of a cook so these are pretty basic recipes  and some of my favorites that I enjoy while training. Hopefully these recipes are something a little different that you may have not tried before.

Brussel  Sprout Hash (Breakfast for 1)
  • 2 tsp Olive Oil
  • 1-2 Bacon Strips
  • 6 Brussel Sprouts thinly sliced
  • Couple Nuts (optional)
  • 1-2 Eggs
  • Salt and Pepper
Cook bacon and brussel sprouts in olive oil. Add nuts and toss. After a couple of minutes when the bacon has cooked spoon onto a plate. Then cook the egg(s), over-easy. Slide the egg over the hash. Break the yolk, add salt and pepper and enjoy!

Pumpkin Parfait (Great for snack or breakfast)
  • Half a Can of All Natural Pureed Pumpkin
  • Low-fat Vanilla Yogurt
  • Granola bar or Granola Cereal
  • 1-2 tsp Honey or Agave Sweetener
  • 1 tap Ground Cinnamon
Gather all the ingredients above. In a bowl mix the pumpkin, cinnamon, and the honey/agave sweetener.(Just the pumpkin with the sweetener and cinnamon makes a great dip for different fruits like apple and pears too). Layer the pumpkin, then the yogurt, and the granola. Repeat as necessary. Delicious!

Easy Spaghetti Squash Lasagna (Serves 4-6)
  • 2 cups Marinara Sauce 
  • 3 cups Cooked Spaghetti Squash
  • 1 cup part Skim Ricotta
  • 8 tsp Parmesan Cheese
  • 6 oz part Skim Shredded Mozzarella
  • 2 thinly sliced Roma Tomatoes
  • Basil
Preheat oven to 375°. In a casserole dish layer the bottom of the dish with 1/2 of the spaghetti squash.  Then ladle 1 cup of the marinara sauce over the top. Sprinkle parmesan cheese over the top. Add the rest of the spaghetti squash, spread evenly. Top with ricotta. Add the rest of the sauce. Top with mozzarella. Add tomatoes and sprinkle basil over the top. Cover with foil and bake for 15-20 minutes until cheese is melted and sauce is bubbling. Uncover and bake for 5 more minutes.


Hope you enjoy these recipes. Like I said these are few of mine. I just recently discovered the spaghetti squash lasagna recipe but I really enjoy it and it's easy to make. Corporate Fight Night is an incredible black tie event where mild mannered business people, men and women, through intensive mental and physical training, transform into real fighters for one incredible night.  Watch local business class go toe-to-toe with like-minded executives, doctors, engineers, lawyers, accountants, and sales executives, for a real USA BOXING sanctioned amateur bout, and they do it for a great cause!  USA Boxing is the only amateur boxing commission in the United States, and is the organizer of America's Olympic Boxing Team.      

The Challenge – We take corporate America out of their comfort zone and provide them an intense physical and emotional challenge in a safe environment that is life changing on a multitude of levels.  Corporate Fight Night boxers go through a selective audition process and an intensive ten to twelve week training program for their big night in the squared circle.  Additionally, each boxer campaigns to rally sponsors for their match which all comes together on their big night when they face their foe on fight night. Balancing careers, family, training, fears, and philanthropy, becomes an incredible character building experience as they put themselves through one of the greatest challenges of their life with all of the pressures of a real prize fighter. 

The Entertainment - There is no top end of town black tie event quite like this one.  It is near impossible to replicate the constant excitement in any other sports or social event.  From the participants’ grand entrance to the ring, to watching these boxers rise to never imagined heights, the thrill and the honor of seeing America’s business class strive so hard for a common goal is worthy of any great 5 star event. 

Charity – We consider it an honor to raise money for great local and national charities.  Previous charities have included The Hirsch Academy, StandUp for Kids, Covenant House, Childspring International, Friends of Dekalb Animals, Semper Fi Fund, The Ben Cohen Stand Up Foundation, Wounded Warrior Project, Boys to Men Mentoring Programs, Home Aid Atlanta, Thaakat Foundation, PAWS Atlanta, Covenant House of GA, Dukes Children’s Hospital, Bert’s Big Adventure, and many more with Children’s Healthcare of Atlanta being our newest addition for ACFN 9.  We are proud to serve, and we love to give through such a great event where people truly are “fighting” for their charity.  The pressure is incredible, but the reward is even more incredible.

The Venues – Atlanta Corporate Fight Night is a black tie, black eye affair!  We search diligently to present our events in the best venue for each show.  ACFN has been hosted in beautiful ballrooms, large trendy night clubs, and elegant event centers.  No matter where we are hosted, we can assure our sponsors that the venue will be the perfect fit for each event.   Our venues are arranged beautifully, with classy silent auction displays, cigar lounges, and gourmet dinner buffets for our corporate VIPs as they dine and have cocktails to the classy tunes of Sinatra-style jazz bands.  An elegant setting, a night of action packed competition, beautiful ring card girls, and 500-800 of the cities A-List corporate crowd make Corporate Fight Night one of the hottest social events and advertising hot spots in the city.
